hi friends. on a weekend adventure several weeks ago ...the hubby & i saw this beautiful country church. got a little valentine happy & decorate a bit.
please check out this recipe here... "the ultimate carrot cake" i've had carrot cakes before ...this one is totally homemade ...i mean every single bit ...
tips for this recipe... dive all in - that's my advice - i added raisins, walnuts, & coconut. i never would have thought carrot cake = coconut. but it's delicious & a must try. makes the kitchen & home smell delicious with all the orange & lemon zest. so glad i found the recipe. i will definitely try it again. our luncheons on both saturday & sunday went well & the cupcakes were a hit. SCORE!!!

Beth! Oh those cupcakes are divine! I love carrot cake the most of any cake. My Mom was a natural cook back when it wasn't that popular. She made the best cakes that were so similar to carrot cakes. She would put dates and raisins and nuts and more nuts in them. I absolutely LOVED them. Thanks for reminding me of my sweet Momma. awh ~ ~ ~
oooo, that cake looks so good. I just posted a country church this morning....we are living parallel lives far apart...in different time zones....eerie music playing.

I love carrot cake - but the coconut - not me! Looks so pretty though.

I put coconut in my fruitcakes, it keeps them moist too.

That carrot cake looks awesome. I would love the coconut--but hubby doesn't like raisins, so I'd leave them out.

all these comments make me smile - my brother dislikes coconut - so i left that off for him & then come to find out he would really wished i had left out the raisins too. hilarious! not that he does not like coconut or raisins just only on other stuff. makes me laugh. love you guys!! you make my day with all the great words here. big big hugs.
