LIFE update


Sometimes it is just nice to show you what I've been up to. The weekend of March 17-19 ... it was a quiet & calm March weekend. The hubs and I jumped in the car and went to new kayakin' stop here in Virginia ... got a few rowin' moments in before a thunderstorm popped up. Rumbling away, we decided, we best be getting our butt out of the water, ASAP!! Wild how those thunderstorms come out of nowhere!! It was a gorgeous day, only took my Iphone. 



I made a homemade Angel Food cake. Have you ever had to get 12 egg whites? ... separating eggs is not an easy task. Ever needed cake flour before? Take a cup of all purpose flour, take out 2 TBS of that flour, put back in 2 TBS of corn starch. Simple as that!! NEAT, HUH??! Did you know that it take 30 mins, 2 have something become "room temperature"? I really did learn a whole bunch from this homemade baking recipe. SO FUN, not sure I will be  making another angel food cake a while ...but fun all the same. You see an angel food cake has to be inverted to cool ... no bottle that we have in the house is the right size to fit within my pan. So I got the coffee percolator, which was the right size, then to hold down the percolator I used my Kitchen Aid mixer. My brother did ask me, WHY DIDN'T U USE WATER N THE PERCOLATOR? Honestly, I didn't think that way? My Dad ask me, you know the cake is not flat, I didn't think about that either? Does a cake have to be flat to cool? No clue??! Next time you make one cut it across in half..layer it with black raspberry ice cream (or the ice cream of your choice) and freeze it..Yummy

A woman has to be inventive now and then Beth. lol The angel food cake sounds good but 12 egg whites?? wow. That's a lot of separating.

Homemade Angel Food Cake,YUMMY! My Mom used to make it that way all the time, but that was when we had chickens on the farm and more eggs than we could use.It is the best.

My mother used to make angel food cake, and then break it up and put it into a strawberry pudding.

Had to laugh about putting water in the percolator...but it does sound delicious.
What a lovely cake (and innovative way to cool it)...I've never made an angel food cake. I didn't know you can remove 2 T of flour and replace with 2 T corn starch to make cake flour!

"Loretta Lynn's Ranch", 8000 Highway 13 South, Hurricane Mills, Tennessee 37078. I have always loved Loretta Lynn's country style music. She is just a legend ...so I knew when the hubby suggested we stay in her campground, I was super excited. I assumed that when you would be staying at her campground, it would sort of be included in the stay price to see all her treasures and tours. Nope, to see anything of the museum or anything else, you would have to pay even more to see her home, museum or bus, etc. WHAT??!! So we walked around and saw what we could see for free, then headed to the campground. I am a very experienced camper ... I have stayed at really pricey campgrounds and very cheap campgrounds ... so we have been there done that, kind situation. So the price we paid I would have thought the campground would have been in better condition. & it was such a letdown that it was not that great.

Point Lookout State Park, Maryland & area lighthouses

Where we stayed: Point Lookout State Park, Maryland

Fort Lincoln, located within Point Lookout State Park. The only original part that is still at the location is the white barrier wall, all buildings are new, I guess the weather and winds are rough on fort. 

Here is a vlog from that day of the sunset view from the state park & a coastline view from Fort Lincoln. I can so see why the fort was so in needs of repair, the winds there are so violent.

I will say that Maryland has pretty tough lighthouses to get to up close, usually you can get better shots, instead of through fences and all that jazz, but at least you can sort of see them? Grayson Highlands State Park & VA Creep Trail, Virginia

I was going to do 2 separate posts for this camping trip but it was only very quick weekend trip back in July of this year. Enjoy the vlogs from that day. We had a ball, such a great trip!!
1st part was our hike on Wilburn Ridge. 2nd day was our bike trip on the VA Creeper Trail. I think one of the most uncomfortable parts of the trip is riding in a huge van with people you have not a clue who they are... you just know that you are going to all be riding the trail. They van you up the mtn & you bike back to Damascus, VA. It is a 17 mile bike trip. Very easy. Not too much work at all.
One of our favorite state parks to camp at in VA is "Grayson Highlands State Park". We love this area 'cause you have the opportunity to bike the "Virginia Creeper Trail".
